A young, beautiful ballet dancer.   A recently widowed serial entrepreneur 30 years her senior.  And a 14-day courtship straight to marriage.  To the naked eye, a love at first sight romance story.  But not all is as it seemed (ain't that always the truth), and this story took a quick left down poison street, straight onto bankrupt business lane, and a hard right onto murder way.  In this episode of Dinner and Drama with Kristin & Drew, we explore the suspected murderer dubbed, the Black Swan, and the crazy relationship of Ashley & Doug Benefield.

Directions:

3 calamari steaks, but into 3/4” strips

Tempura Batter: 

1 cup A/P flour

1 large egg 

1 cup ice water (do not get ice into batter) 

Combine batter ingredients and whisk until smooth.  Preheat Deep fryer to: 400.  Dip calamari strips into the batter, shake of the excess.  


Using a deep fryer, fry calamari steaks for 3 minutes or until crispy. 


Topping: 

6 Slices bacon, cooked and chopped

Fresh corn cut from the cob 

3 scallions chopped

1 cup cherry tomato chopped

Sautée: corn, scallion, and cherry tomato until heated through, salt and pepper to taste 


Cheaters Lemon Aioli: 

3 medium cloves Garlic, minced

1 Tbsp lemon zest

2 tsp Lemon juice

1/2 cup Mayonnaise, good quality

1 Pinch Salt

Combine above and let sit for 30 minutes. 


Once calamari is fried, spoon aioli into the bottom of your serving dish.  Place calamari strips on top of aioli.  Spoon bacon, tomato corn mixture over the top.  Enjoy!
