A 34-Year old mother of two seemingly vanishes out of nowhere only to reappear 22-days later on the on-ramp to a busy interstate with a chain around her waist, her left hand zip-tied to it, and hose clamps around her ankles.   Claims of kidnapping, pleas for her return, reward money, and a mystery seemingly solved with a piece of unknown DNA tied to an ancestral database.  In this episode of Dinner and Drama with Kristin & Drew we uncover the disappearance and kidnapping of Sherri Papini, her even stranger reappearance and now what federal prosecutors claim - an elaborate hoax.  Sit down, relax, and unravel this bizarre story alongside us!

Above-Suspicion Tilapia Fish Dinner

Ingredients

Tilapia:

4 tilapia fish fillets 

2 cloves garlic minced

1 lime juiced

2 tablespoons Mexican chilli spice 

1/4 teaspoon salt

1 tablespoon olive oil

Bean Mixture

1 cup drained canned black beans

1/2 cup your favorite salsa

1/4 teaspoon salt

Assemble

2 cups cooked couscous

1/3 cup (or to taste) your favorite salsa

1/3 cup Guacamole

sour cream (optional)

grape tomatoes (optional)

sliced jalapeños (optional)

Instructions

1.    Toss the fish fillets with all ingredients except for the olive oil. Rub the spice, garlic and lime well into each fillet.  Let sit for 15 min.

2.    Heat skillet over medium-high heat with the olive oil, and when hot, add the tilapia fish. Let the fish sear on one side for 6 mins, flip the fillets and let them cook for another 5-6 mins. 

3.    In the meantime, prepare the bean mixture. Mash up the black beans roughly using a fork in a bowl, season them with salt, and toss them with the salsa mixture while gently mashing to your desired texture.

Plating

Spoon cous cous onto plate, top with bean mixture and additional salsa, tomato and jalapeno. Place the fish fillet to side of cous cous and then surround it with some salsa, guacamole and sour crème if desired.
